Recipe Saturday - Fabulous Fudge Cheesecake

Hi All,


It's Saturday again, and recipe time. The recipe I chose for this week is courtesy of Belinda McBride. Belinda posted this on TRS, and it sounded so delicious I had to share. This Fabulous Fudge Cheesecake is very easy to make. I would love to know how it turned out if you choose to make it.


Fabulous Fudge Cheesecake




*Make your favorite crust, or buy on that's pre- made. I made one out of crushed Oreo cookies and a little bit of butter.*


Ingredients:

3 packages of cream cheese, room temperature
2 cups semi-sweet chocolate chips, melted and cooled
4 eggs, room temperature
1 can sweetened condensed milk
1 tbsp vanilla


Directions:


1.Using a large bowl, beat the cheese till its smooth, blend in the chocolate. Add the eggs one at a time till blended. Stir in the milk and vanilla. Don't overbeat, you do not want to incorporate air into the batter. Place prepared crust on a baking pan and fill it with batter.


2.Place in oven that's been preheated to 325 degrees. Bake 40 to 45 minutes until the center is nearly set. (you want a jiggly area about 2 inches across. Cool on a rack for 10 minutes, then run a knife around the edge of the cake to loosen it. Cool at least an hour before removing from the pan. Keep refrigerated.


You can serve this with ganache topping, whipped cream, or a berry sauce. Yields about a dozen servings, (less if you're a piggy like me) and has about a gajillion calories.

It's Thursday... What are you reading?

Hi All,


I have seriously been slacking on my blog lately. I have a good excuse though, I was sick. I had pneumonia, and then a respiratory infection. I am much better now, and trying to get back in the swing of things. I did get a lot of reading done while I was bedridden, and that's always a good thing. so.. This is what I'm reading this week..

I am only a few pages in on this story, but I have read Ms. Harte's books before, and I am sure this novel is just as captivating as the rest. I will definitely let you know my thoughts on it.

I pace along the darkening wintry sea.

Now round the yule-log and the glittering tree

Twinkling with festive tapers, eyes as bright

Sparkle with Christmas joys and young delight,

As each one gathers to his family.


But I--a waif on earth where'er I roam--

Uprooted with life's bleeding hopes and fears

From that one heart that was my heart's sole home,

Feel the old pang pierce through the severing years,

It's Thursday... What are you reading?

Hi All,

Wow! Can you believe it's December already? It's really hard to believe how fast this year has gone by. I have discovered some great reads and authors this year. I'm also looking forward to the New Year, and the upcoming releases and conclusions to some of my favorite series. I have been sick this week, my doctor claims I have "Walking Pneumonia". I have been spending a lot of time in bed reading, and I have finally put a little teeny dent in my TBR list. It's still ridiculously long, but I did make progress, and that's always a good thing. So.. Here is my weekly rundown...

This is what I'm reading...
